TRUFFLE HUNTING IN TUSCANY

San Giovanni D’Asso in Tuscany is famous for the White Truffle which can be found between October and December each year.

This is a new addition for 2011 so why not be one of the first to go Truffle Hunting with Taste Tuscany . . .

We start the day by dressing in warm clothes and solid boots! We’ve long passed the lovely hot summer days of July and August (sorry!) but if you’re in this area why not enjoy a walk through the woods searching out the elusive and much sought after White Truffle . . .

First we’ll meet our hosts and the owners of the land we’ll be traversing. You’ll also be introduced to Mario, Sara and Greta the Lagotto Romagnolo dogs whose noses will seek out the prized truffle.

We’ll be in a private reserve, in a wooded area full of oaks, birches and poplars and walking across very fertile sandy soil, perfect for truffle.

It’s usually a slow start as the dogs get warmed up and onto the scent of the truffles. Truffles like the wet weather and moist earth just as for the Porcini mushrooms also found in this area. The main difference though is that the truffles are underground so a helping hand is required. One could get a pig to do the deed but it’s not so easy to train them to not eat the truffles so a trained hound is the ideal companion.

Once the hunt gets underway and the first truffle is scented the dog is left for a few seconds to indicate the location, digging furiously. Then he’s called away and the hunter then has the delicate task of digging and pulling out the truffle. Some are there just below the surface. Others will be deeper and harder to find. The important thing is to work slowly and patiently so as not to damage the truffle.

So I’ve said enough . . . you’ll learn in much more detail if you’re there in the woods with us!

Suffice to say you can witness an age old hunt, assist too, and then enjoy a relaxed lunch tasting some of the wonderful truffles that are unearthed . . . Bruschetta with truffle Oil, Tagliolini Pasta with Truffle Sauce, the famous egg with truffle shavings . . . a glass of local wine.
